Ingredients:

For the Couscous:

1.1 cups of couscous

1.2 cups of water  

1.3tablespoons of olive oil

1.4 teaspoon of salt

For the Stew:

1. 1 lb of boneless lamb or chicken, cut into pieces (you can also use beef or vegetables for a vegetarian option)

2. 2 onions, finely chopped

3. 2 cloves of garlic, minced

4. 2 tablespoons of vegetable oil

5. 2 teaspoons of ground cumin

6. 2 teaspoons of ground coriander

7. 1 teaspoon of ground cinnamon

8. 1 teaspoon of ground paprika

9. 1 teaspoon of ground ginger

10. 1 teaspoon of ground turmeric

11. 1 teaspoon of cayenne pepper (adjust to your preferred level of spiciness)

12. 2 cups of chicken or vegetable broth

13. 1 cup of canned chickpeas, drained and rinsed

14. 1 cup of chopped carrots

15. 1 cup of chopped zucchini

16. 1 cup of chopped bell peppers

17. 1 cup of chopped tomatoes

18. Salt and pepper to taste

19. A handful of chopped fresh cilantro and parsley for garnish

Instructions:

Prepare the Couscous:

-Place the couscous in a large bowl.

-In a separate pot, bring 2 cups of water to a boil. Add a pinch of salt and olive oil.

-Pour the boiling water over the couscous, then cover the bowl with a clean kitchen towel or plastic wrap.

-Let it sit for about 10-15 minutes to allow the couscous to steam and fluff with a fork. Set it aside.

Prepare the Stew:

-In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat.

-Add the finely chopped onions and cook until they become translucent.

-Add the minced garlic and the spices (cumin, coriander, cinnamon, paprika, ginger, turmeric, and cayenne pepper) and sauté for a couple of minutes to release their flavors.

Add the Meat or Vegetables:

-If you're using meat, add the lamb, chicken, or beef pieces and brown them on all sides.

-If you're going for a vegetarian option, simply add your choice of vegetables and sauté them until they begin to soften.

Pour in the Broth:

-Pour in the chicken or vegetable broth to the pot and bring it to a simmer.

-Cover the pot and let it cook for about 30-45 minutes until the meat is tender and the flavors have melded together.

Add the Chickpeas and Vegetables:

-Add the drained chickpeas, chopped carrots, zucchini, bell peppers, and tomatoes to the pot.

-Continue simmering for another 15-20 minutes until the vegetables are cooked through.

Season and Serve:

-Season the stew with salt and pepper to taste.

-Fluff the couscous with a fork once more and serve it alongside the stew.

-Garnish the dish with a generous amount of fresh cilantro and parsley.
