Ingredients:
For the Tajine:
1.5 to 2 pounds (700-900g) of meat (chicken, lamb, or beef), cut into pieces
2 tablespoons olive oil
1 large onion, finely chopped
2-3 cloves of garlic, minced
1 teaspoon ground cumin
1 teaspoon ground paprika
1 teaspoon ground coriander
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Salt and pepper, to taste
1/2 cup dried apricots or dates (optional)
1/2 cup chopped fresh cilantro or parsley, for garnish
1/4 cup almonds, toasted (optional)

Prepare the Ingredients:
If using chicken, lamb, or beef, cut it into manageable pieces and season with salt and pepper.
In a small bowl, mix together the ground cumin, paprika, coriander, cinnamon, and ginger. This spice blend is known as Ras el Hanout, a signature Moroccan spice mix.
If you're using dried apricots or dates, you can soak them in warm water for 15-20 minutes to soften them.
Heat the Tajine Pot:
Place your tajine pot on a diffuser or a heat diffusing trivet. This helps distribute heat evenly and prevents the pot from cracking. Slowly heat the tajine pot over low to medium heat.
Sauté the Onions and Garlic:
Add olive oil to the tajine pot and heat it. Add the finely chopped onions and minced garlic. Sauté them until they become translucent.
Brown the Meat (if using):
- If you're using meat, add it to the pot and brown it on all sides.
Add Spices:
- Sprinkle the Ras el Hanout spice blend over the meat and onions. Mix well to coat the meat evenly with the spices.
