Ingredients:

For the Tajine:

  • 1.5 to 2 pounds (700-900g) of meat (chicken, lamb, or beef), cut into pieces

  • 2 tablespoons olive oil

  • 1 large onion, finely chopped

  • 2-3 cloves of garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon ground paprika

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground ginger

  • Salt and pepper, to taste

  • 1/2 cup dried apricots or dates (optional)

  • 1/2 cup chopped fresh cilantro or parsley, for garnish

  • 1/4 cup almonds, toasted (optional)

For the Tajine Pot:

  • A traditional clay tajine pot with a conical lid

Instructions:

  1. Prepare the Ingredients:

    • If using chicken, lamb, or beef, cut it into manageable pieces and season with salt and pepper.

    • In a small bowl, mix together the ground cumin, paprika, coriander, cinnamon, and ginger. This spice blend is known as Ras el Hanout, a signature Moroccan spice mix.

    • If you're using dried apricots or dates, you can soak them in warm water for 15-20 minutes to soften them.

  2. Heat the Tajine Pot:

    • Place your tajine pot on a diffuser or a heat diffusing trivet. This helps distribute heat evenly and prevents the pot from cracking. Slowly heat the tajine pot over low to medium heat.

  3. Sauté the Onions and Garlic:

    • Add olive oil to the tajine pot and heat it. Add the finely chopped onions and minced garlic. Sauté them until they become translucent.

  4. Brown the Meat (if using):

    • If you're using meat, add it to the pot and brown it on all sides.
  5. Add Spices:

    • Sprinkle the Ras el Hanout spice blend over the meat and onions. Mix well to coat the meat evenly with the spices.
  6. Add the Optional Dried Fruits:

    • If you're using dried apricots or dates, add them to the tajine pot at this stage.
  7. Pour Water:

    • Add enough water to cover the meat. Stir well to combine the spices, meat, and water.

  8. Simmer and Cook:

    • Place the conical lid on the tajine pot and reduce the heat to low. Let the tajine simmer gently for 1.5 to 2 hours, or until the meat becomes tender. Check periodically to ensure there's enough liquid; add more water if needed.

  9. Garnish and Serve:

    • Before serving, sprinkle chopped cilantro or parsley over the tajine. Optionally, you can also add toasted almonds for extra flavor and crunch.

  10. Serving:

    • Serve the Moroccan tajine directly from the tajine pot at the table. It's traditionally accompanied by flatbread or couscous.
